We could all use an extra portion of veggies...
But there's only so many carrots you can cram into your lunch, only so many handfuls of kale you can put into dinner...lets talk breakfast!
If I'm going to add veggies to arguably the best meal of the day, it's going to need to be tasty...
So here's 3 tasty ways to sneak veggies into breakfast:
Spicy Eggs
You need: 3 Eggs, Cup of Spinach, 2 Tomatoes, Paprika + Chilli
Scramble your eggs with chopped tomatoes.
Wilt the spinach + add to the eggs.
Top with paprika + chilli to taste.
2. Savoury Pancakes
You need: 3 Eggs, 1 Cup almond flour, 20g Grated cheese, Mushrooms, Spinach, 2 Tomatoes
Mix eggs + almond flour to form a batter. Fry as a normal pancake.
Fry mushrooms, tomatoes + spinach together.
Top the pancakes with the veggies + top with the cheese.
3. Picnic Breakfast
You need: 2 Boiled eggs, Cucumber sticks, 2 tomatoes, Cheese sticks, Olives, Lean meat of choice.
Lay these out on a plate charcuterie style!
